Carrot Un-Tuna

A simple recipe using the pulp left after juicing carrots.

Ingredients
  

  • 1 cup carrot pulp
  • 1/4 cup vegan mayonnaise
  • 1/4 yellow onion finely diced
  • 1/4 pepper diced
  • 1 tbsp celery seed season to taste
  • 1/4 tsp sea salt season to taste
  • 1 dash cayenne pepper season to taste

Instructions
 

  • Mix all prepared ingredients together in a medium-sized bowl. Place on your chose of bread. You can substitute a flour wrap or lettuce, kale, or collard leaf wrap in place of bread. Top with lettuce and tomato, or your choice of raw veggies.
