Veggie Sandwich Recipe

Vegan Burger Recipe

I'd like to think of myself as a veggie burger connoisseur. I've had them all: synthetic as well as recognizable-in-nature ingredient-based burgers; homemade and restaurant bought; simple and epicurean. What I found over the years is that I most enjoy a whole food veggie burger that is packed with flavor and has a good use of spices. This simple and quick recipe makes maximum use of such ingredients.
Prep Time 15 minutes
Cook Time 8 minutes
Servings 4 burgers

Ingredients
  

  • 1 potato grated, with skin
  • 3 carrots grated
  • 1 bell pepper finely diced
  • 1 yellow onion finely diced
  • 1/2 cup mushrooms chopped
  • 2 cloves garlic minced
  • 1/3 cup quick-cooking oats
  • 1/3 cup cornmeal
  • 1/2 cup extra virgin olive oil
  • 1 tsp cumin to taste
  • 1 tsp sea salt to taste
  • dash cayenne to taste

Instructions
 

  • Mix well. Shape into patties, and place into a lightly oiled pan on medium heat. Cook on each side until golden brown.
    * As an option, you could put these on a hinge type indoor grill. Also, be creative. Substitute different vegetables and spices. It's pretty difficult to mess up veggie burgers!
